Gluten Free Shrimp Ceviche

Ingredients
  • 1 pound wild caught shrimps, shelled, deveined and chopped
  • 1 ripe but firm avocado, diced
  • 1 large tomato, diced
  • 1 large cucumber, peeled and diced
  • ⅓ cup fresh cilantro, chopped
  • ½ of small red onion, diced
  • 1 lime, juiced
  • Himalayan salt
  • black pepper
  • splash of olive oil
  • 1 small jalapeno, thinly sliced
Instructions
  1. Heat a medium pot with water sprinkle some salt and over high heat and let it boil. Add the shrimps and immediately turn off the heat. Let sit for 3 minutes then drain.
  2. In a large bowl combine the shrimps, the veges, another splash of olive oil and season with salt and pepper. Yum!
