Gluten Free Shrimp Ceviche

Ingredients
- 1 pound wild caught shrimps, shelled, deveined and chopped
- 1 ripe but firm avocado, diced
- 1 large tomato, diced
- 1 large cucumber, peeled and diced
- ⅓ cup fresh cilantro, chopped
- ½ of small red onion, diced
- 1 lime, juiced
- Himalayan salt
- black pepper
- splash of olive oil
- 1 small jalapeno, thinly sliced
Instructions
- Heat a medium pot with water sprinkle some salt and over high heat and let it boil. Add the shrimps and immediately turn off the heat. Let sit for 3 minutes then drain.
- In a large bowl combine the shrimps, the veges, another splash of olive oil and season with salt and pepper. Yum!
