Hello! Thanks for being here. I’m Jan Withington. I grew up in the Philippines. I moved to the U.S. when I met my husband more than 20 years ago. My diet had changed significantly when I moved here. In the Philippines we eat rice, fish and mostly vegetables. Bread, pasta and baked goods are very expensive. So, my family did not eat a lot of baked goods. My husband eats pizzas, pasta, bread and cakes. I started noticing some gastrointestinal symptoms after a couple of years of living here, and it got worse and worse. I thought I had cancer. I went on to see different doctors and I had all kinds of testing and imaging. They never figured out what was happening to me. It was frustrating.
I became very health conscious and started watching Dr. Oz and several other shows on tv. Then one day Dr. Oz mentioned about “Gluten Sensitivity” and it was like a light bulb that clicked. I tried reading more about gluten intolerance and celiac. I tried to eat just rice and vegetables. I eliminated bread and pastas in my diet and in a couple of weeks my symptoms greatly improved.
It’s been more than 10 years since switching to gluten free diet and I must say… I feel brand new everyday and have more energy and am happy overall.
I now enjoy cooking not only for my family and friends I also get to share my recipes to all of you…
