Easy gluten free oat pancakes

Ingredients
  • 1 cup Bob's Red Mill Muesli Hot or Cold Cereal - GF
  • 1 cup Bob's Red Mill 1 to 1 Baking Flour - GF
  • 1 (5.3 oz) Greek yogurt of your choice
  • 1 apple, peeled, cored and grated
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 & ¼ cup water
  • 2 large eggs
  • lemon or lime zest
  • butter
  • maple syrup for serving
Instructions
  1. In a large bowl, combine the cereal, flour, baking powder, vanilla, yogurt, eggs, zest, 1 & ¼ cup water and grated apple. Mix well.
  2. Heat a cast iron pan or griddle to medium to low heat. When ready to cook, brush butter on the pan and scoop enough batter for a pancake and cook 1 to 2 minutes each side.
  3. Serve with more butter and your favorite maple syrup.
