Gluten Free Banana Nut Bread with Strawberries

Easy gluten free banana nut bread with strawberries.

Ingredients
- 1 stick (8 tablespoons) butter, melted and slightly cooled
- ¾ cup sugar
- 1 teaspoon Spice Island Vanilla - GF
- 2 large eggs (at room temperature) beaten
- 3 ripe bananas, smashed
- ¼ cup whole milk
- 2 cups Cup4Cup Gluten Free Flour
- 1 teaspoon Clabber Girl Baking Soda - GF
- ½ teaspoon salt
- 1 cup walnuts or pecans, chopped
- few fresh strawberries, sliced
Instructions
- Preheat oven to 350 degrees F.
- Grease a loaf pan and sprinkle flour.
- Whisk butter, bananas, vanilla, eggs, milk and sugar in a large bowl. Combine dry ingredients in another bowl. Combine the two bowls and fold in the nuts. Tap the pan to even out and to remove some air bubbles.
- Arrange the sliced strawberries on top.
- Bake from 45-60 minutes or until a toothpick inserted in the middle comes out clean.

Oh wow! Now this looks delicious. I just got a big batch of strawberries at discount, and need a recipe to use with the old bananas I have too! I’m sure this will come out moist, and with the strawberries giving sweetness and elevating the dish on a whole.
