Gluten Free Peanut Brittle

Ingredients
- 1 cup dry roasted peanuts
- ½ cup Karo Light Corn Syrup - gluten free
- 1 teaspoon Arm & Hammer Baking Soda - gluten free
- ⅛ teaspoon salt
- 1 cup granulated sugar
- 2 tablespoons organic butter
- 2 teaspoons Spice Islands Vanilla Extract - gluten free
Instructions
- Line a large baking pan or cookie sheet with parchment paper and grease with butter.
- Combine the sugar, corn syrup and salt in a small saucepan over medium heat. Stir constantly until it starts to boil. Let it cook without stirring for 5 minutes until golden brown. Add the peanuts and cook for another 2 minutes.
- Remove from heat and add the butter, baking soda and vanilla. Stir to combine. Pour the mixture on the prepared pan and spread nicely with a spatula. Let it stand for few minutes until hardened before cutting into pieces. Ready
Notes
Raw peanuts are best.
