Ingredients
  • 3 cups Cup4Cup Multipurpose Flour - gluten free
  • 1 teaspoon McCormick Apple Pie Spice - gluten free
  • 1 stick butter, cut into small pieces
  • ½ cup pitted dates, chopped
  • ½ cup candied cherries
  • 2 teaspoons Clabber Girl Baking Powder - gluten free
  • ⅔ cup raisins
  • ¾ cup milk
  • 2 eggs
  • 6 tablespoons orange juice
  • 1 orange zest
  • 1 ripe banana, mashed
  • ¾ cup ready to eat apricots, chopped
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a 9 inch cake pan with butter and line with parchment paper. Grease the parchment paper as well.
  3. In a large bowl sift the flour and apple spice. Rub the butter by hand until the mixture resembles fine breadcrumbs. Add the apricots, raisins, cherries, milk, eggs, orange zest and juice. Mix well and stir in the mashed banana. Spoon the mixture into the prepared pan and level the surface. Bake for 1 hour until a toothpick inserted in the middle comes out clean. Let the cake cool for few minutes before serving. Yum!
Notes
You can also make your own apple pie spice. You only need 1 teaspoon of the mixture for the fruit cake.
3 tablespoons McCormick Ground Cinnamon - gluten free
2 teaspoons McCormick Nutmeg - gluten free
1 teaspoon McCormick Allspice - gluten free
1 teaspoon McCormick Ground Ginger - gluten free
