Gluten Free Churros

Ingredients
- 1 cup Mina's Purely Divine All Purpose Baking Mix - gluten free
- 1 teaspoon McCormick Ground Cinnamon - gluten free
- ¼ cup granulated sugar
- ¼ teaspoon salt
- 1 stick organic butter
- 3 large eggs, beater
- 1 cup water
- cooking oil for frying
Instructions
- Heat about 2 inches of oil in a deep fryer or heavy bottom pan until reaches 360 degrees F.
- In a saucepan, combine butter, water and salt. Bring to a boil over high heat. Stir in the flour and reduce heat to low and stir vigorously about a minute. Turn off the heat and stir in the eggs stirring constantly about 2 to 3 minutes.
- Carefully spoon dough into the pastry bag. Cut the tip and squeeze about 4 to 5 inches into the hot oil. Fry until golden brown about 4 minutes. Transfer to a plate with paper towels.
- Mix sugar and the cinnamon on a plate. Roll the churros on the cinnamon sugar mixture. Serve

Cut the pastry bag tip where the biggest/fattest portion indicates.
