Gluten Free Salad with Ginger Lime Dressing

Ingredients
  • ½ English cucumber, halved and cut crosswise into thin slices
  • 3 radishes, thinly sliced
  • 2 carrots, julienned
  • 10 cherry tomatoes, halved
  • 1 head Laitue Frisee, cut into bite pieces
  • 1 bunch watercress, washed and chopped in the middle of the stem
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon San J Tamari soy sauce - gluten free
  • 1 tablespoon Marukan Seasoned Gourmet Rice Vinegar - gluten free
  • 1 small shallot, minced
  • 1 lime juice
  • 1 teaspoon sugar
  • 2 tablespoons olive oil or vegetable oil
  • salt and pepper
Instructions
  1. Whisk the soy sauce, rice vinegar, ginger, shallots, lime juice, sugar, olive oil in a medium bowl and season with salt and pepper.
  2. In a large bowl, combine the cucumber, radishes, carrots, tomatoes, watercress and laitue frisee.
  3. Pour the dressing and toss. Serve
