Gluten Free Salad with Ginger Lime Dressing

Ingredients
- ½ English cucumber, halved and cut crosswise into thin slices
- 3 radishes, thinly sliced
- 2 carrots, julienned
- 10 cherry tomatoes, halved
- 1 head Laitue Frisee, cut into bite pieces
- 1 bunch watercress, washed and chopped in the middle of the stem
- 1 tablespoon grated fresh ginger
- 1 tablespoon San J Tamari soy sauce - gluten free
- 1 tablespoon Marukan Seasoned Gourmet Rice Vinegar - gluten free
- 1 small shallot, minced
- 1 lime juice
- 1 teaspoon sugar
- 2 tablespoons olive oil or vegetable oil
- salt and pepper
Instructions
- Whisk the soy sauce, rice vinegar, ginger, shallots, lime juice, sugar, olive oil in a medium bowl and season with salt and pepper.
- In a large bowl, combine the cucumber, radishes, carrots, tomatoes, watercress and laitue frisee.
- Pour the dressing and toss. Serve
