Gluten-Free Maple Roasted Chicken Thighs

Ingredients

3 pounds skinless, boneless chicken thighs; remove all fats
½ cup 100% pure maple syrup; divided - any brand naturally gluten free
salt and pepper
2 large sweet potatoes, peeled and cut into 1 inch chunks
3 medium carrots, peeled and cut into 1 inch chunks
1 large onion, peeled and cut into 1 inch chunks

Instructions

<ol>
<li>Preheat oven to 450 degrees F.</li>
<li>On a rimmed baking pan, season the chicken with salt and pepper.</li>
<li>Drizzle half of the maple syrup and nicely incorporate to cover the chicken.</li>
<li>In another rimmed baking pan, place the vegetables together, season with salt and pepper the drizzle the remaining maple syrup.</li>
<li>Roast for 45 minutes turning once. You can broil for 3 minutes to get the edges slightly charred. Serve</li>
