Gluten Free Italian Roasted Mushrooms and Veggies

Ingredients
  • 1 pound cremini mushrooms, cleaned and stem trimmed
  • cauliflower florets, cut into bite pieces
  • 2 cups grape or cherry tomatoes
  • 6 garlic cloves, smashed
  • olive oil
  • fresh basil, chopped
  • fresh oregano, chopped
  • fresh rosemary, chopped
  • fresh thyme, chopped
  • salt and pepper
  • fresh parsley, chopped for garnish
Instructions
  1. Preheat oven to 400 degrees F.
  2. Place the mushrooms and veggies in a baking pan. Drizzle olive oi and sprinkle the herbs and season with salt and pepper. Gently toss to mix.
  3. Bake form 25 to 30 minutes or until tender. Serve
