Gluten Free Italian Roasted Mushrooms and Veggies

Ingredients
- 1 pound cremini mushrooms, cleaned and stem trimmed
- cauliflower florets, cut into bite pieces
- 2 cups grape or cherry tomatoes
- 6 garlic cloves, smashed
- olive oil
- fresh basil, chopped
- fresh oregano, chopped
- fresh rosemary, chopped
- fresh thyme, chopped
- salt and pepper
- fresh parsley, chopped for garnish
Instructions
- Preheat oven to 400 degrees F.
- Place the mushrooms and veggies in a baking pan. Drizzle olive oi and sprinkle the herbs and season with salt and pepper. Gently toss to mix.
- Bake form 25 to 30 minutes or until tender. Serve
