

Ingredients
1½ pounds chicken tenders, diced
2 to 3 green onions, sliced
4 oz fresh mozzarella cheese, shredded
⅓ cup Smart Balance Mayo - gluten free
⅓ cup Cup4Cup multipurpose flour - gluten free
2 cloves garlic, minced
2 eggs
salt and pepper
oil for frying
Instructions

<li>Mix all the ingredients in a large bowl except the oil. Cover and refrigerate for at least 2 hours.</li>
<li>Heat a non- stick pan to medium heat and add a splash of oil. Scoop about 2 tablespoons of the chicken mixture and lightly flatten, fry uncovered about 3 minutes per side or until golden.</li>
<li>Transfer to a plate with paper towels. Cook the rest adding more olive oil as needed. Serve</li>
