Ingredients
  • 1½ pounds chicken tenders, diced
  • 2 to 3 green onions, sliced
  • 4 oz fresh mozzarella cheese, shredded
  • ⅓ cup Smart Balance Mayo - gluten free
  • ⅓ cup Cup4Cup multipurpose flour - gluten free
  • 2 cloves garlic, minced
  • 2 eggs
  • salt and pepper
  • olive oil for frying
Instructions
  1. Mix all the ingredients in a large bowl except the olive oil. Cover and refrigerate for at least 2 hours.
  2. Heat a non- stick pan to medium heat and add a splash of olive oil. Scoop about 2 tablespoons of the chicken mixture and lightly flatten, fry uncovered about 3 minutes per side or until golden. Transfer to a plate with paper towels. Cook the rest adding more olive oil as needed. Serve
