Gluten Free Chicken Fritters

Ingredients
- 1½ pounds chicken tenders, diced
- 2 to 3 green onions, sliced
- 4 oz fresh mozzarella cheese, shredded
- ⅓ cup Smart Balance Mayo - gluten free
- ⅓ cup Cup4Cup multipurpose flour - gluten free
- 2 cloves garlic, minced
- 2 eggs
- salt and pepper
- olive oil for frying
Instructions
- Mix all the ingredients in a large bowl except the olive oil. Cover and refrigerate for at least 2 hours.
- Heat a non- stick pan to medium heat and add a splash of olive oil. Scoop about 2 tablespoons of the chicken mixture and lightly flatten, fry uncovered about 3 minutes per side or until golden. Transfer to a plate with paper towels. Cook the rest adding more olive oil as needed. Serve
