Gluten-Free Cilantro Lemon Chicken Tenders

Ingredients

2 packages of chicken tenders (about 2 to 3 pounds)
1 lemon, juiced
⅓ cup chopped fresh cilantro
olive oil
2 garlic cloves, minced
1 tablespoon sesame oil
1 tablespoon raw honey - naturally gluten free
1 jalapeno pepper, minced and 2 more, seeded and sliced
1 yellow or red bell pepper, sliced
kosher salt
black pepper

Instructions

  1. Preheat grill to medium high heat.
  2. Pat dry chicken tenders with paper towels in a large bowl. Drizzle olive oil and season chicken with salt and pepper.
  3. Combine garlic, cilantro, minced jalapeno, honey, lemon juice and sesame oil in a small bowl. Add the mixture with the chicken and gently incorporate together.
  4. Thread chicken onto metal or bamboo skewers alternating with bell peppers and sliced jalapeno peppers.
  5. Grill chicken about 3 to 4 minutes per side until done. Serve
