Ingredients
1 pound shrimps, shelled, deveined then chopped
1 tablespoon Eden Foods Mirin - GF
3 tablespoons Clabber Girl Cornstarch - GF
3 green onions, chopped
1 red chili pepper or 1/2 of jalapeno pepper, diced
1 egg
1 small to medium carrot, cut into thin strips
salt and pepper
cooking oil for frying
Instructions
- In a bowl, mix the ingredients and season with salt and pepper.
- Heat a non stick pan over medium heat and add a splash of cooking oil.
- Scoop about 2 tablespoons of the shrimp mixture and gently drop on the frying pan shaping into a mound. Fry few in batches about 3 minutes turning halfway or until cooked through and edges are slightly crispy.
- Serve with your favorite Asian dipping sauce. Enjoy!
