Gluten-Free Dried Fruit Chia Seed Bars

Ingredients

½ cup almonds, blanched

½ cup roasted pecans

¼ cup roasted sunflower seeds

¼ cup flaxseed

¼ cup dried blueberries

¼ cup dried cherries

¼ cup dried cranberries

2 tablespoons coconut flakes

1 tablespoon HerbaZest Lucuma Powder - GF

2 tablespoons hemp seeds

⅓ cup chia gel

1 tablespoon honey or maple syrup, optional

CHIA GEL

1/2 cup water

3 tablespoons chia seeds

Instructions

<ol>
<li>Spray a 13x23-cm loaf tin with coconut oil and set aside.</li>
<li>Place almonds and pecans into a food processor and secure lid.  Pulse 3 to 4 times.</li>
<li>Transfer chopped nuts into a medium-size mixing bowl.</li>
<li>Place sunflower seeds, flaxseed, dried fruit, coconut flakes and Lucuma powder into the food processor. Pulse 15 to 20 times.  Add mixture to the chopped nuts.</li>
<li>Add hemp seeds, chia gel, and honey or maple syrup to the mixing bowl and stir well to combine.</li>
<li>Press mixture into prepared loaf tin. Cover with plastic wrap and refrigerate overnight.</li>
<li>Slice into bars.</li>

<strong>Note:</strong>

To make the chia gel, place 1/2 cup water and 3 tablespoons chia seeds into a food processor secure lid. Start the blender on its lowest speed then quickly increase to its highest speed.  Blend for about a minute.
