Gluten Free Braised Pork Belly

Ingredients
  • 2 to 3 pounds pork belly from Costco or Asian store
  • ⅔ cup San J Tamari Soy Sauce - gluten free
  • ½ cup Heinz Distilled White Vinegar - gluten free
  • 5 garlic cloves, smashed
  • salt and black pepper
  • 5 fresh bay leaves
  • ¼ cup brown sugar
  • cooking oil
  • 3 green onions, sliced for garnish
Instructions
  1. Cut pork belly into serving sizes.
  2. Mix all other ingredients plus a dash of black pepper into a large resealable bag. Add the pork and marinate for few hours or overnight in the fridge. When ready, place the pork with the marinade in a dutch oven and bring to a boil. Lower the heat to medium low and cook for 2 hours. Add small water if it looks dry. Season with salt if desired. Remove the pork from the sauce. Heat a non stick pan to medium heat and add a splash of cooking oil. Fry the pork for few minutes on all sides then transfer to a platter. Strain the sauce to a small saucepan and slow boil until thickened. Serve pork with sauce and green onions. Yummy!
