Gluten Free Baked Cod with Capers

Ingredients
- cod fillets
- pinch of McCormick red pepper flakes - gluten free
- salt and pepper
- 2 medium shallots, thinly sliced
- 2 garlic cloves, sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons capers
- 2 tablespoons fresh parsley, chopped
- ½ cup cherry tomatoes, sliced
Instructions
- Preheat oven to 350 degrees F.
- Pat dry the fish with paper towels. Season with salt and pepper.
- Heat butter and olive oil to medium high heat on a cast iron pan. Add shallots and garlic. Saute until soft then add pepper flakes and tomatoes. Cook for 2 minutes. Place cod fillets over, sprinkle with parsley and capers. Bake 25 to 30 minutes. Serve
