Gluten Free Baked Cod with Capers

Ingredients
  • cod fillets
  • pinch of McCormick red pepper flakes - gluten free
  • salt and pepper
  • 2 medium shallots, thinly sliced
  • 2 garlic cloves, sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped
  • ½ cup cherry tomatoes, sliced
Instructions
  1. Preheat oven to 350 degrees F.
  2. Pat dry the fish with paper towels. Season with salt and pepper.
  3. Heat butter and olive oil to medium high heat on a cast iron pan. Add shallots and garlic. Saute until soft then add pepper flakes and tomatoes. Cook for 2 minutes. Place cod fillets over, sprinkle with parsley and capers. Bake 25 to 30 minutes. Serve
