Easy gluten free pork stew with black eyed beans

Ingredients
  • 2 pounds pork center loin chops, or boneless pork chops, cut into cubes
  • 1 pound package black eyed beans
  • 5 to 6 medium tomatoes, diced
  • spinach
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 5 garlic cloves, crashed
  • salt and pepper
  • 3 cups water or more
Instructions
  1. Soak black eyed beans with water for 1 hour or more. Drain.
  2. Season pork with salt and pepper.
  3. Brown pork with olive oil in a Dutch oven or a heavy bottom pot. Transfer pork to a plate. Saute onion and garlic followed with the diced tomatoes. Cook for few minutes.
  4. Stir in the beans and pork. Then add the water. Stir and cover. Simmer for about 45 minutes or until pork and beans are tender. Adjust taste with salt and pepper before adding the spinach. Yum!
