Ingredients
cod fillets
pinch of McCormick red pepper flakes - gluten free
salt and pepper
2 medium shallots, thinly sliced
2 garlic cloves, sliced
2 tablespoons butter
1 tablespoon olive oil
2 tablespoons capers
2 tablespoons fresh parsley, chopped
½ cup cherry tomatoes, sliced
Instructions
- Preheat oven to 350 degrees F.
- Pat dry the fish with paper towels. Season with salt and pepper.
- Heat butter and olive oil to medium high heat on a cast iron pan. Add shallots and garlic. Sauté until soft then add pepper flakes and tomatoes.
- Cook for 2 minutes. Place cod fillets over, sprinkle with parsley and capers.
- Bake 25 to 30 minutes. Serve
