Gluten Free Yam Noodles with Shrimps

Ingredients
- 5 packages Miracle Noodles - gluten free
- 1 pound large shrimps, peeled and deveined
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- ½ of large onion, diced
- 1 cup shredded parmesan cheese
- salt and pepper
- 2 tablespoons butter
- 2 garlic cloves, minced
- olive oil
- 2 tablespoons fresh parsley, chopped
Instructions
- Rinse the noodles with cold water. Season shrimps with salt and pepper.
- Boil a pot of water. Cook the noodles according to package directions. Set aside. Heat a Dutch oven over medium high heat. Add some olive oil then garlic. Saute the onions for few minutes then add the bell peppers. Add the shrimps and cook until pink. Add butter then the noodles. Stir nicely, season if needed. Stir in the parmesan cheese and top with parsley. Serve
