Gluten-Free Turkey and Stuffing Croquettes

Ingredients

2 pounds ground turkey
1 1/2 cups Ian's Homestyle Stuffing Mix - gluten free
1 1/2 cups finely chopped celery
3/4 cup Pacific Chicken Broth or Swanson Chicken Broth - gluten free
1 medium size onion, finely chopped
2 egg whites, lightly beaten
3 tablespoons minced parsley
5 oz grated parmesan cheese
1/4 teaspoon black pepper
salt
oil for frying
lettuce for serving

Instructions

  1. In a large skillet, brown the turkey, drain excess water and season with salt and pepper. Let it cool for few minutes.
  2. In a large bowl, combine turkey, stuffing, onion, egg whites, parsley, celery, black pepper, cheese and broth. Season with salt.
  3. Mix well until blended. Shape turkey mixture into small logs packing firmly together.
  4. Heat oil in a wide nonstick pan over medium-high heat. Fry turkey croquettes until browned about 5 minutes turning gently to keep them from breaking.
  5. Serve with shredded lettuce. Yum!
