Gluten-Free Turkey and Stuffing Croquettes

Ingredients

2 pounds ground turkey
1 1/2 cups Ian's Homestyle Stuffing Mix - gluten free
1 1/2 cups finely chopped celery
3/4 cup Pacific Chicken Broth or Swanson Chicken Broth - gluten free
1 medium size onion, finely chopped
2 egg whites, lightly beaten
3 tablespoons minced parsley
5 oz grated parmesan cheese
1/4 teaspoon black pepper
salt
oil for frying
lettuce for serving

Instructions

<ol>
<li>In a large skillet, brown the turkey, drain excess water and season with salt and pepper. Let it cool for few minutes.</li>
<li>In a large bowl, combine turkey, stuffing, onion, egg whites, parsley, celery, black pepper, cheese and broth. Season with salt.</li>
<li>Mix well until blended. Shape turkey mixture into small logs packing firmly together.</li>
<li>Heat oil in a wide nonstick pan over medium-high heat. Fry turkey croquettes until browned about 5 minutes turning gently to keep them from breaking.</li>
<li>Serve with shredded lettuce. Yum!</li>
