Gluten Free Roasted Chicken

Ingredients
- 1 (5 to 6 lbs.) roasting chicken
- bunch of fresh thyme
- salt and pepper
- 1 lemon, quartered
- 5 cloves garlic
- 5 tablespoons melted butter
- ½ medium onion, quartered
Instructions
- Preheat oven to 425 degrees F.
- Wash the chicken inside and outside. Put it in a big pan and pat dry with paper towels.
- Season the inside of the chicken with salt and pepper. Stuff the chicken with lemons, onion, garlic and thyme. Secure the legs nicely with a string. Drizzle butter over chicken and season with salt and pepper. Roast the chicken for 1 and ½ hours. Let stand for 5 minutes before slicing. Serve
