Gluten-Free Roasted Chicken

Ingredients

1 (5 to 6 lbs.) roasting chicken
bunch of fresh thyme
salt and pepper
1 lemon, quartered
5 cloves garlic
5 tablespoons melted butter
1/2 medium onion, quartered

Instructions

<ol>
<li>Preheat oven to 425 degrees F.</li>
<li>Wash the chicken inside and outside. Put it in a big pan and pat dry with paper towels.</li>
<li>Season the inside of the chicken with salt and pepper. Stuff the chicken with lemons, onion, garlic and thyme.</li>
<li>Secure the legs nicely with a string. Drizzle butter over chicken and season with salt and pepper.</li>
<li>Roast the chicken for 1 and ½ hours. Let stand for 5 minutes before slicing. Serve</li>
