Gluten Free Chicken with Strawberry-Avocado Salsa

Ingredients
- 4 chicken breasts, skinless and boneless
- olive oil
- salt and pepper
- 2 tablespoons fresh oregano, minced
- 2 cloves garlic, minced
- SALSA
- 1 ripe but firm avocado, diced
- 1 serrano or ½ jalapeno pepper (optional) thinly sliced
- 1 cup organic strawberries, diced
- ½ lime juice
- ¼ cup or less olive oil
- ½ small red onion, diced
- ¼ cup fresh cilantro, chopped
- salt and pepper
Instructions
- Drizzle olive oil over chicken and season, with minced garlic, oregano, salt, pepper and squirt of lime juice.
- Heat a large cast iron pan to medium heat. Cook the chicken until done for few minutes. Remove from the heat and set aside while you prepare the salsa.
- Combine the salsa ingredients in a medium bowl and season with salt and pepper. Serve chicken with salsa. Yum!
Notes
This is a little bit spicy! You can use just ½ or the serrano pepper or not if you have kids who doesn't like spicy food.
