Gluten Free Chicken with Strawberry-Avocado Salsa

Ingredients
  • 4 chicken breasts, skinless and boneless
  • olive oil
  • salt and pepper
  • 2 tablespoons fresh oregano, minced
  • 2 cloves garlic, minced
  • SALSA
  • 1 ripe but firm avocado, diced
  • 1 serrano or ½ jalapeno pepper (optional) thinly sliced
  • 1 cup organic strawberries, diced
  • ½ lime juice
  • ¼ cup or less olive oil
  • ½ small red onion, diced
  • ¼ cup fresh cilantro, chopped
  • salt and pepper
Instructions
  1. Drizzle olive oil over chicken and season, with minced garlic, oregano, salt, pepper and squirt of lime juice.
  2. Heat a large cast iron pan to medium heat. Cook the chicken until done for few minutes. Remove from the heat and set aside while you prepare the salsa.
  3. Combine the salsa ingredients in a medium bowl and season with salt and pepper. Serve chicken with salsa. Yum!
Notes
This is a little bit spicy! You can use just ½ or the serrano pepper or not if you have kids who doesn't like spicy food.
