Gluten-Free Chicken with Strawberry-Avocado Salsa

Ingredients

4 chicken breasts, skinless and boneless
olive oil
salt and pepper
2 tablespoons fresh oregano, minced
2 cloves garlic, minced

SALSA:
1 ripe but firm avocado, diced
1 serrano or ½ jalapeno pepper (optional) thinly sliced
1 cup organic strawberries, diced
½ lime juice
¼ cup or less olive oil
½ small red onion, diced
¼ cup fresh cilantro, chopped
salt and pepper

Instructions

<ol>
<li>Drizzle olive oil over chicken and season, with minced garlic, oregano, salt, pepper and squirt of lime juice.</li>
<li>Heat a large cast iron pan to medium heat. Cook the chicken until done for few minutes. Remove from the heat and set aside while you prepare the salsa.</li>
<li>Combine the salsa ingredients in a medium bowl and season with salt and pepper. Serve chicken with salsa. Yum!</li>
