Ingredients
2 cups Jasmine rice
1½ cups carrots
2 green onions, sliced
¼ cup San J Tamari Soy Sauce - gluten free
½ stick organic butter
3 garlic cloves, minced
1 medium onion, diced
4 large eggs, lightly beaten
2 chicken breasts, filleted
2 tablespoon fresh oregano, minced
½ lime juice
olive oil
salt and pepper
Instructions
- Cook the rice according to package directions.
- Drizzle olive oil over chicken and season with oregano, half of the garlic, lime juice, salt and pepper.
- Heat a cast iron pan to medium heat. Cook the chicken until cooked through and set aside. Heat a wok to medium heat, melt butter then add the onions and garlic . Sauté onions until soft, season with salt and pepper. Add the carrots and green onions reserving half for garnish. Cook for few minutes then transfer to a plate.
- Cook the eggs scrambled style on the same wok and transfer to a plate. Add more butter to the pan and add rice.
- Cook rice for 2 minutes then season with soy sauce, salt and pepper. Return the onions and eggs.
- Sliced the chicken into bite pieces. Top rice with chicken and garnish with green onions. Yum!
