Gluten-Free Chicken Fried Rice

Gluten-Free Chicken Fried Rice

Ingredients

2 cups Jasmine rice
1½ cups carrots
2 green onions, sliced
¼ cup San J Tamari Soy Sauce - gluten free
½ stick organic butter
3 garlic cloves, minced
1 medium onion, diced
4 large eggs, lightly beaten
2 chicken breasts, filleted
2 tablespoon fresh oregano, minced
½ lime juice
olive oil
salt and pepper

Instructions

  1. Cook the rice according to package directions.
  2. Drizzle olive oil over chicken and season with oregano, half of the garlic, lime juice, salt and pepper.
  3. Heat a cast iron pan to medium heat. Cook the chicken until cooked through and set aside. Heat a wok to medium heat, melt butter then add the onions and garlic . Sauté onions until soft, season with salt and pepper. Add the carrots and green onions reserving half for garnish. Cook for few minutes then transfer to a plate.
  4. Cook the eggs scrambled style on the same wok and transfer to a plate. Add more butter to the pan and add rice.
  5. Cook rice for 2 minutes then season with soy sauce, salt and pepper. Return the onions and eggs.
  6. Sliced the chicken into bite pieces. Top rice with chicken and garnish with green onions. Yum!
