Gluten-Free Braised Pork Belly

Ingredients

2 to 3 pounds pork belly from Costco or Asian store
⅔ cup San J Tamari Soy Sauce - gluten free
½ cup Heinz Distilled White Vinegar - gluten free
5 garlic cloves, smashed
salt and black pepper
5 fresh bay leaves
¼ cup brown sugar
cooking oil
3 green onions, sliced for garnish

Instructions

  1. Cut pork belly into serving sizes.
  2. Mix all other ingredients plus a dash of black pepper into a large resealable bag. Add the pork and marinate for few hours or overnight in the fridge.
  3. When ready, place the pork with the marinade in a Dutch oven and bring to a boil. Lower the heat to medium low and cook for 2 hours.
  4. Add small water if it looks dry. Season with salt if desired. Remove the pork from the sauce.
  5. Heat a non stick pan to medium heat and add a splash of cooking oil. Fry the pork for few minutes on all sides then transfer to a platter. Strain the sauce to a small saucepan and slow boil until thickened.
  6. Serve pork with sauce and green onions. Yummy!
