Gluten-Free Roasted Chicken

Ingredients

1 (5 to 6 lbs.) roasting chicken
bunch of fresh thyme
salt and pepper
1 lemon, quartered
5 cloves garlic
5 tablespoons melted butter
1/2 medium onion, quartered

Instructions

  1. Preheat oven to 425 degrees F.
  2. Wash the chicken inside and outside. Put it in a big pan and pat dry with paper towels.
  3. Season the inside of the chicken with salt and pepper. Stuff the chicken with lemons, onion, garlic and thyme.
  4. Secure the legs nicely with a string. Drizzle butter over chicken and season with salt and pepper.
  5. Roast the chicken for 1 and ½ hours. Let stand for 5 minutes before slicing. Serve
