Gluten-Free Creamy Chicken with Broccoli

Ingredients

4 chicken breast, skinless and boneless
2 cups broccoli, cut into bite pieces
1 (12 oz.) Pacific Organic Cream of Chicken Condensed Soup - gluten free
¾ cup whole milk
McCormick Paprika - gluten free
kosher salt
black pepper
3 cloves garlic, minced
3 tablespoons butter
1 tablespoon olive oil
fresh parsley for garnish

Instructions

  1. Season chicken with salt, pepper and paprika.
  2. Heat a pan to medium heat then add 2 tablespoons butter and olive oil. Cook the chicken until done about 3 minutes per side and set aside when done.
  3. In the same pan add the remaining butter and sauté the garlic until fragrant. Add the milk and cream of chicken. Cook until bubbly then add the broccoli. Cook for another 3 minutes.
  4. Return the chicken and let it cook for 2 more minutes.
  5. Garnish with chopped parsley. Serve
