Gluten-Free Chicken with Shishito Peppers

Gluten-Free Chicken with Shishito Peppers

Ingredients

3 to 4 pounds chicken wings
1 pint shishito peppers
½ cup fresh cilantro, chopped
½ cup San J Tamari Soy Sauce - gluten free
1 tablespoon Sun Luck sesame oil - gluten free
4 garlic cloves, minced
1 inch fresh ginger, minced or grated
splash of olive oil
salt and pepper
juice of 1 lime
2 tablespoons vegetable oil
1 jalapeno pepper, thinly sliced (optional)

Instructions

  1. In a bowl combine the soy sauce, lime juice, sesame oil, garlic, ginger, and cilantro. Season the chicken with salt and pepper then add the soy sauce mixture.
  2. Gently coat the chicken and cover with plastic wrap.
  3. Marinate in the fridge for at least 30 minutes to overnight.
  4. Heat a cast iron pan to medium high heat. Roast the shishito peppers until charred and blistered. Set aside.
  5. Heat a large cast iron pan pan to medium high heat then add the vegetable oil. Remove chicken from the marinade.
  6. Cook the chicken about 10 to 12 minutes or until cooked through.
  7. Serve with peppers, fresh cilantro and jalapenos. Yum!
