Gluten-Free BBQ Burger with Fried Onions

Ingredients

Udi's Hamburger Buns - gluten free
1½ cups Bob's Red Mill All Purpose Flour - gluten free
salt and pepper
½ teaspoon McCormick Ground Cayenne Pepper - gluten free
McCormick Garlic Powder - gluten free
Sweet Baby Ray's BBQ Sauce - gluten free
Swiss cheese, thinly sliced
2 pounds lean ground beef
lettuce
1 yellow onion, thinly sliced into rounds
cooking oil
1 quart buttermilk

Instructions

  1. Pour buttermilk in a large bowl and add the onions. Soak onions for about 1 hour.
  2. Make 4 to 6 patties and season with garlic powder, salt and pepper.
  3. Pour a good amount of cooking oil in a Dutch oven or fryer. Heat until 375 degrees f.
  4. In a large bowl, combine flour, cayenne pepper, salt and pepper. Using a tong grab some onions and let it drip to remove excess buttermilk then place in the flour mixture to coat. Remove excess flour and fry until golden brown about 1 to 2 minutes then transfer to a plate lined with paper towels.
  5. Continue cooking the rest of the onions.
  6. Meanwhile, heat grill to medium high heat and grill the burgers according to doneness about 3 to 4 minutes per side. Top burgers with the Swiss cheese.
  7. Assemble the burgers according to your liking. Top with BBQ sauce and fried onions. Serve
