Gluten Free Banana Chocolate Chip Oatmeal Muffins

Ingredients
- 3 cups Bob's Red Mill Old Fashioned Oats - gluten free
- 1 teaspoon Clabber Girl Baking Powder - gluten free
- 1 teaspoon Spice Islands Vanilla Extract - gluten free
- ½ cup Toll House Nestle Milk Chocolate Morsels - gluten free
- ½ cup shredded coconuts, coarsely chopped and toasted
- 3 ripe bananas, mashed
- 1½ cups milk
- 2 large eggs
- 3 tablespoons packed brown sugar
- 3 tablespoon butter, melted
- ½ teaspoon salt
- 1 cup toasted walnuts, coarsely chopped
Instructions
- Preheat oven to 350 degrees F.
- Place 12 muffin paper cup on the muffin tin.
- In a large bowl combine the oats, toasted coconuts, mashed bananas, eggs, vanilla extract, sugar, butter, milk, baking powder and salt. Then add the walnuts and chocolate chips.
- Scoop mixture filling to the top of the muffin cups. Bake from 30 to 35 minutes until golden and a toothpick inserted in the middle comes out clean. Let them cool for 5 minutes. Serve
