Gluten-Free Banana Chocolate Chip Oatmeal Muffins

Ingredients

3 cups Bob's Red Mill Old Fashioned Oats - gluten free
1 teaspoon Clabber Girl Baking Powder - gluten free
1 teaspoon Spice Islands Vanilla Extract - gluten free
½ cup Toll House Nestle Milk Chocolate Morsels - gluten free
½ cup shredded coconuts, coarsely chopped and toasted
3 ripe bananas, mashed
1½ cups milk
2 large eggs
3 tablespoons packed brown sugar
3 tablespoon butter, melted
½ teaspoon salt
1 cup toasted walnuts, coarsely chopped

Instructions

<ol>
<li>Preheat oven to 350 degrees F.</li>
<li>Place 12 muffin paper cup on the muffin tin.</li>
<li>In a large bowl combine the oats, toasted coconuts, mashed bananas, eggs, vanilla extract, sugar, butter, milk, baking powder and salt. Then add the walnuts and chocolate chips.</li>
<li>Scoop mixture filling to the top of the muffin cups. Bake from 30 to 35 minutes until golden and a toothpick inserted in the middle comes out clean.</li>
<li>Let them cool for 5 minutes. Serve</li>
