Gluten-Free Banana Chocolate Chip Oatmeal Muffins

Ingredients

3 cups Bob's Red Mill Old Fashioned Oats - gluten free
1 teaspoon Clabber Girl Baking Powder - gluten free
1 teaspoon Spice Islands Vanilla Extract - gluten free
½ cup Toll House Nestle Milk Chocolate Morsels - gluten free
½ cup shredded coconuts, coarsely chopped and toasted
3 ripe bananas, mashed
1½ cups milk
2 large eggs
3 tablespoons packed brown sugar
3 tablespoon butter, melted
½ teaspoon salt
1 cup toasted walnuts, coarsely chopped

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place 12 muffin paper cup on the muffin tin.
  3. In a large bowl combine the oats, toasted coconuts, mashed bananas, eggs, vanilla extract, sugar, butter, milk, baking powder and salt. Then add the walnuts and chocolate chips.
  4. Scoop mixture filling to the top of the muffin cups. Bake from 30 to 35 minutes until golden and a toothpick inserted in the middle comes out clean.
  5. Let them cool for 5 minutes. Serve
