Easy Quinoa Salad

Ingredients

1 cup quinoa, rinsed
1 ripe mango, peeled, pitted and diced
2 ripe avocados, peeled, pitted and diced
seeds of 1 pomegranate
3 cups kale leaves, chopped and cooked until wilted
fresh cilantro, chopped
salt and pepper
CITRUS DRESSING:
1/3 cup olive oil
juice of 1 lime or lemon
salt and pepper

Instructions

  1. Cook the quinoa according to package directions.
  2. Cook the kale for few minutes with a splash of water, then drained.
  3. Mix all the ingredients in a large bowl.
  4. In another bowl, mix all the dressing ingredients.
  5. Drizzle the dressing over the salad and gently mix. Ready!
