Ingredients
1 cup quinoa, rinsed
1 ripe mango, peeled, pitted and diced
2 ripe avocados, peeled, pitted and diced
seeds of 1 pomegranate
3 cups kale leaves, chopped and cooked until wilted
fresh cilantro, chopped
salt and pepper
CITRUS DRESSING:
1/3 cup olive oil
juice of 1 lime or lemon
salt and pepper
Instructions
- Cook the quinoa according to package directions.
- Cook the kale for few minutes with a splash of water, then drained.
- Mix all the ingredients in a large bowl.
- In another bowl, mix all the dressing ingredients.
- Drizzle the dressing over the salad and gently mix. Ready!
