Gluten-Free Beef Stew

Ingredients

2 pounds beef for stew
1 packet McCormick Gluten Free Beef Stew Mix
4 medium red potatoes, quartered
1 cup green beans
1 cup baby carrots
½ cup green peas, optional
¾ cup water for the mix
2 or 3 cups water, depending how much vegetables you use
salt and pepper
1 tablespoon Clabber Girl Cornstarch - gluten free
2 tablespoons olive oil

Instructions

<ol>
<li>Season beef with salt and pepper.</li>
<li>Heat a non stick pan to medium high heat then add oil. Sear the beef until browned about 5 minutes, discard the juice from the beef.</li>
<li>Place the beef in a pressure cooker then add about 3 cups water. Cook for 16 minutes. Remove from heat and run cold water over the lid in the sink until it's safe to open.</li>
<li>Place the pressure cooker back to the stove. Stir the mix with ¾ cup water. Pour the mix over and add the vegetables. Stir to incorporate.</li>
<li>Close the lid and cook for another 3 minutes. When it's done run cold water over the sink to cool it down quicker the return to heat adding the green peas and cornstarch. Cook for a minute then serve.</li>
