Gluten-Free Maple Roasted Chicken Thighs

Ingredients

3 pounds skinless, boneless chicken thighs; remove all fats
½ cup 100% pure maple syrup; divided - any brand naturally gluten free
salt and pepper
2 large sweet potatoes, peeled and cut into 1 inch chunks
3 medium carrots, peeled and cut into 1 inch chunks
1 large onion, peeled and cut into 1 inch chunks

Instructions

  1. Preheat oven to 450 degrees F.
  2. On a rimmed baking pan, season the chicken with salt and pepper.
  3. Drizzle half of the maple syrup and nicely incorporate to cover the chicken.
  4. In another rimmed baking pan, place the vegetables together, season with salt and pepper the drizzle the remaining maple syrup.
  5. Roast for 45 minutes turning once. You can broil for 3 minutes to get the edges slightly charred. Serve
