Gluten-Free Chocolate Banana Bread

Ingredients

3 very ripe bananas and 1 ripe but firm banana (thinly sliced)
1½ cups Bob's Red Mill 1 to 1 Baking Flour - gluten free
1 teaspoon Clabber Girl Baking Powder - gluten free
1 teaspoon McCormick Vanilla Extract - gluten free
½ cup Hershey's Semi Sweet Chocolate Morsels - gluten free
1 teaspoon Arm & Hammer Baking Soda - gluten free
⅓ cup melted butter
1 large egg
pinch of salt
½ cup granulated sugar

Instructions

  1. Preheat oven to 350 degrees F.
  2. Butter up a loaf pan.
  3. In a large bowl, mash the 3 bananas with a fork. Add the melted butter, baking powder, baking soda and salt. Stir in the vanilla extract, egg and sugar.
  4. Mix in the flour then the chocolate morsels. Pour the batter into the prepared pan. Top with banana slices and more chocolates if desired.
  5. Bake from 45 minutes to 50 or until a toothpick inserted in the middle comes out clean. Cool before serving. Yummy!
