Crusty Muesli Bread (Gluten Free)

Ingredients

2 cups Bob's Red Mill Muesli Hot or Cold Cereal - GF
1 and 1/2 cups Namaste Gluten Free Flour
1 and 1/2 cups warm water plus more for soaking the muesli mix.
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon fast-acting yeast
olive oil for greasing

Instructions

<li>Soak the muesli mix with enough warm water for 20 minutes. Then remove excess water if any.</li>
<li>Warm up 1 1/2 cups water to 110 degrees F. in a bowl, add in the sugar and yeast. Let it sit until foamy about 5 minutes.</li>
<li>In a large bowl, combine the flour, salt, soaked muesli mix and the yeast mixture. Stir to incorporate all the ingredients.</li>
<li>Form the dough into a round shape. Lightly grease the bowl with olive oil. Cover and let it rise for 2 hours.</li>
<li>Preheat oven to 450 degrees F. Place a cup of hot water in an oven safe small pan at the lowest oven rack.</li>
<li>Transfer the dough to a floured surface. Knead a few times. Sprinkle a little bit of flour on top of the dough. This will keep the bread moist while baking.</li>
<li>Place the dough in a Dutch oven or 7 inch cast iron pan, sprinkle along side and bottom with flour. Slash the top of the dough 2 or 3 times with a sharp knife.</li>
<li>Bake the bread for 25 to 35 minutes, or until golden brown. Remove the bread from the oven and let it cool. Ready!</li>
