Gluten-Free Peanut Brittle

Ingredients

1 cup dry roasted peanuts
½ cup Karo Light Corn Syrup - gluten free
1 teaspoon Arm & Hammer Baking Soda - gluten free
⅛ teaspoon salt
1 cup granulated sugar
2 tablespoons organic butter
2 teaspoons Spice Islands Vanilla Extract - gluten free

Instructions

  1. Line a large baking pan or cookie sheet with parchment paper and grease with butter.
  2. Combine the sugar, corn syrup and salt in a small saucepan over medium heat. Stir constantly until it starts to boil. Let it cook without stirring for 5 minutes until golden brown.
  3. Add the peanuts and cook for another 2 minutes.
  4. Remove from heat and add the butter, baking soda and vanilla. Stir to combine.
  5. Pour the mixture on the prepared pan and spread nicely with a spatula. Let it stand for few minutes until hardened before cutting into pieces. Ready
