Gluten-Free Italian Roasted Mushrooms and Veggies

Ingredients

1 pound cremini mushrooms, cleaned and stem trimmed
cauliflower florets, cut into bite pieces
2 cups grape or cherry tomatoes
6 garlic cloves, smashed
olive oil
fresh basil, chopped
fresh oregano, chopped
fresh rosemary, chopped
fresh thyme, chopped
salt and pepper
fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place the mushrooms and veggies in a baking pan. Drizzle olive oi and sprinkle the herbs and season with salt and pepper.
  3. Gently toss to mix.
  4. Bake form 25 to 30 minutes or until tender. Serve
