Ingredients
1 (12 oz) Simple Truth Elbow Macaroni - gluten free
½ cup Hellmann's Mayonnaise - gluten free
½ cup low fat or fat free Chobani Greek Yogurt (non-fat) - gluten free
1 tablespoon Grey Poupon Country Dijon Mustard - gluten free
1½ tablespoons Pompeian Gourmet White Vinegar - gluten free
1 tablespoon raw honey - naturally gluten free
2 hard boiled eggs, diced
1 cup carrots, cut into matchsticks
¾ cup celery, diced
1 red bell pepper, diced
⅓ cup red onion, diced
1 tablespoon fresh parsley, chopped
Instructions
- Cook the macaroni according to package directions. Drain well.
- In a medium bowl, combine yogurt, mayonnaise, mustard, vinegar, honey and season with salt and pepper.
- In another large bowl, combine macaroni, bell pepper, carrots, celery, eggs and onion. Reserve about ½ cup of the mixture for topping. Pour dressing and toss to coat.
- Add the remaining mixture on top for color.
- Garnish with fresh chopped parsley. Serve
