Gluten-Free Apple Fritters

Ingredients

2 cups Cup4Cup Multipurpose Flour or Krusteaz All Purpose Flour - gluten free
2 teaspoons Clabber Girl Baking Powder - gluten free
2 teaspoons McCormick Ground Cinnamon - gluten free
2 teaspoons McCormick Pure Vanilla Extract - gluten free
1 teaspoon salt
2 large eggs
1 cup whole milk (or more depending on the consistency, should be slightly thick)
3 tablespoons butter, melted
½ cup granulated sugar
2 large apples (granny smith) peeled, cored and sliced into rounds about 1/2 inch
vegetable oil for frying
powdered sugar for dusting

Instructions

  1. Pour about 3 inches of vegetable oil in a Dutch oven and heat over medium low to medium heat until about 300 degrees F.
  2. In an large bowl mix the flour, baking powder, cinnamon, granulated sugar, vanilla, milk, butter, eggs, and salt.
  3. Coat the apple slices with the batter and slowly slide into the hot oil. Work in batches about 3 to 4 at a time. Fry for few minutes until browned and crispy.
  4. Transfer to a plate with paper towels. When you're done dust with powdered sugar. Super yummy!
