Gluten-Free Sweet Rice Balls with Spam

Ingredients

2 cups sweet rice (glutinous rice)
1 can Spam with Real Hormel Bacon - GF, diced
1 cup frozen corn kernels, thawed
2 medium zucchinis, diced
2 Nori Seaweed Sheets - GF, cut into small pieces
2 tablespoons butter
1 tablespoon toasted sesame seeds plus more for garnish

Instructions

  1. Cook the rice as you normally do.
  2. Melt 1 tablespoon butter on a wok over medium heat and cook the spam until edges are slightly charred. Transfer to a plate.
  3. Place the remaining butter in the wok and cook corn and zucchini for about 3 minutes.
  4. Add the cooked rice and seaweed. Stir to incorporate all the ingredients. Cook for another 2 minutes.
  5. Remove from heat and let the rice cool a little bit.
  6. Form balls of rice. Garnish more sesame seeds before serving. So delicious!
