Gluten-Free French Apple Cake

Ingredients

1½ cups Cup4Cup Multipurpose Flour - gluten free
1½ teaspoons Clabber Girl Baking Powder - gluten free
1//4 teaspoon Arm & Hammer Baking Soda - gluten free
1 teaspoon McCormick Vanilla Extract - gluten free
½ cup granulated sugar
½ cup whole buttermilk
1 stick butter, melted (8 tablespoons)
2 large eggs, beaten
¼ teaspoon kosher salt

FOR FILLING:
3 Granny Smith Apples or any apple works as well, peeled and thinly sliced
¼ cup granulated sugar
1 teaspoon McCormick Ground Cinnamon - gluten free
1½ tablespoons unsalted butter, cut into small cubes (to dot the top)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Butter a 9 inch springform pan.
  3. In a large bowl, sift together the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk the milk, butter, vanilla and eggs. Beat using a handheld electric beater until smooth. Add the flour mixture and stir to incorporate. Pour the batter in the prepared pan.
  4. In a large bowl combine the apples, cinnamon and ¼ cup sugar.
  5. Arrange the apple slices overlapping from the outer to the center of the cake.
  6. Dot with butter and place on a baking pan lined with aluminum foil to catch any drippings.
  7. Bake from 45 to 50 minutes or until cook through. Ready!
