Gluten-Free Banana Nut Bread with Strawberries

Ingredients

1 stick (8 tablespoons) butter, melted and slightly cooled
3/4 cup sugar
1 teaspoon Spice Island Vanilla - GF
2 large eggs (at room temperature) beaten
3 ripe bananas, smashed
1/4 cup whole milk
2 cups Cup4Cup Gluten Free Flour
1 teaspoon Clabber Girl Baking Soda - GF
1/2 teaspoon salt
1 cup walnuts or pecans, chopped
few fresh strawberries, sliced

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a loaf pan and sprinkle flour.
  3. Whisk butter, bananas, vanilla, eggs, milk and sugar in a large bowl. Combine dry ingredients in another bowl. Combine the two bowls and fold in the nuts. Tap the pan to even out and to remove some air bubbles.
  4. Arrange the sliced strawberries on top.
  5. Bake from 45-60 minutes or until a toothpick inserted in the middle comes out clean.

Oh wow! Now this looks delicious. I just got a big batch of strawberries at discount, and need a recipe to use with the old bananas I have too! I’m sure this will come out moist, and with the strawberries giving sweetness and elevating the dish on a whole.
