Ingredients
1/2 cup Bob's Red Mill 1 to 1 Baking Flour - gluten free
1 & 1/2 teaspoon baking powder
1/2 cup creamy peanut butter
1/2 cup dairy-free chocolate chips
1 avocado, diced
1/2 cup cooked sweet potato
1/4 cup Thai Kitchen Coconut Cream - gluten free
2 tablespoons maple syrup
3 tablespoons cacao powder
1/8 cup water or more as needed
Instructions
- Grease a square baking pan with coconut oil or line with parchment paper.
- In a bowl, combine all ingredients except chocolate chips and avocado, mix until well combined. Adjust consistency with a little bit of water.
- Stir in the chocolate chips and avocado transfer to the prepared pan.
- Level out the batter.
- Bake for 35-40 minutes, then remove and allow to cool before slicing.
