Gluten-Free Banana Nut Bread with Strawberries

Ingredients

1 stick (8 tablespoons) butter, melted and slightly cooled
3/4 cup sugar
1 teaspoon Spice Island Vanilla - GF
2 large eggs (at room temperature) beaten
3 ripe bananas, smashed
1/4 cup whole milk
2 cups Cup4Cup Gluten Free Flour
1 teaspoon Clabber Girl Baking Soda - GF
1/2 teaspoon salt
1 cup walnuts or pecans, chopped
few fresh strawberries, sliced

Instructions

<ol>
<li>Preheat oven to 350 degrees F.</li>
<li>Grease a loaf pan and sprinkle flour.</li>
<li>Whisk butter, bananas, vanilla, eggs, milk and sugar in a large bowl. Combine dry ingredients in another bowl. Combine the two bowls and fold in the nuts. Tap the pan to even out and to remove some air bubbles.</li>
<li>Arrange the sliced strawberries on top.</li>
<li>Bake from 45-60 minutes or until a toothpick inserted in the middle comes out clean.

Oh wow! Now this looks delicious. I just got a big batch of strawberries at discount, and need a recipe to use with the old bananas I have too! I’m sure this will come out moist, and with the strawberries giving sweetness and elevating the dish on a whole.
