Hello! I’m so glad you’re here. I’m Jan Withington, and I grew up in the Philippines. Over 20 years ago, I moved to the U.S. after meeting my husband. My diet changed drastically when I arrived here. In the Philippines, we mostly ate rice, fish, and vegetables, and baked goods like bread and pasta were rare and expensive. But my husband loved foods like pizza, pasta, bread, and cakes. After a few years of living in the U.S., I began noticing some troubling gastrointestinal symptoms that only worsened over time. I even feared I might have cancer. I visited various doctors and underwent numerous tests and scans, but no one could figure out what was wrong. It was incredibly frustrating.
Determined to take control of my health, I became more conscious of what I was eating and started watching shows like Dr. Oz. One day, Dr. Oz mentioned “gluten sensitivity,” and it was like a light bulb went off. I dove into learning more about gluten intolerance and celiac disease. I decided to try a diet of only rice and vegetables, eliminating bread and pasta. Within weeks, my symptoms significantly improved.
It’s been over 10 years since I switched to a gluten-free diet, and I can honestly say I feel better every day. I have more energy, feel happier, and am overall healthier.
Now, I love cooking for my family and friends, and I’m excited to share my recipes with all of you. I hope this site helps make your gluten-free cooking easier and healthier.
