Gluten Free Sweet Rice Balls with Spam

Serves: 4 servings
- 2 cups sweet rice (glutinous rice)
- 1 can Spam with Real Hormel Bacon - GF, diced
- 1 cup frozen corn kernels, thawed
- 2 medium zucchinis, diced
- 2 Nori Seaweed Sheets - GF, cut into small pieces
- 2 tablespoons butter
- 1 tablespoon toasted sesame seeds plus more for garnish
- Cook the rice as you normally do.
- Melt 1 tablespoon butter on a wok over medium heat and cook the spam until edges are slightly charred. Transfer to a plate.
- Place the remaining butter in the wok and cook corn and zucchini for about 3 minutes.
- Add the cooked rice and seaweed. Stir to incorporate all the ingredients. Cook for another 2 minutes.
- Remove from heat and let the rice cool a little bit.
- Form balls of rice. Garnish more sesame seeds before serving. So delicious!
