In a large bowl, combine the cream cheese, lemon zest, cheddar, salt, ketchup, vinegar, hot sauce and soy sauce. Use a rubber spatula and mix until combined. Form into a ball.
Place the cheese ball unto a plastic wrap and form into a log about 10 to 12 inches. Cut about ⅓ of the log and form into a ball.
Stick pomegranate seeds on the cheese ball.
Place the remaining cheese log on a platter upright and cover with chopped parsley.
Place the cheese ball on top and stick pretzel sticks around.
Serve with gluten free crackers. Yum!
