Combine garlic, shallots, oregano, olive oil, lemon juice, and jalapeno in a large resealable bag. Add the pork and incorporate the ingredients together.
Refrigerate overnight.
Preheat grill to medium high heat.
When ready to grill, remove the pork from marinade and thread to bamboo skewers.
Grill pork for about 3 to 5 minutes per side until done. Serve
