Heat a large cast iron pan to medium heat. Add a splash of olive oil. Cook the pork until done. Time is depending on thickness. Set aside and cover with foil to keep warm.
Heat a large non-stick pan to medium heat. Add butter and mushrooms. Saute mushrooms for few minutes until they start to brown then season with salt and pepper. Add the flour and cook for a minute. Stir in the broth and cream. Cook until thickened.
Serve pork with the mushrooms and garnish with parsley. Yummy!
